🥕 Garden Vegetable Soup
Ingredients
1 container Kettle & Fire Chicken Bone Broth
Minced garlic
1 onion, diced
1 celery stalk, diced
2 cans diced tomatoes, drained
2 bags mixed vegetables
1 can diced potatoes, drained
3 tbsp butter
2 tbsp olive oil
Salt, to taste
Pepper, to taste
Parsley, to taste
Onion powder, to taste
Garlic powder, to taste
Celery seed, to taste
Celery flakes, to taste
Shredded Parmesan cheese
Focaccia bread
Instructions
1. Start the Base In a large soup pot over medium heat, add the butter and olive oil.
2. Sauté the Garlic & Vegetables Add the minced garlic and cook for about 1 minute, until fragrant.
Add the diced onion and celery. Cook for a few minutes until they begin to soften.
3. Add the Vegetables Add the mixed vegetables and stir everything together.
Then add the drained diced tomatoes and diced potatoes.
4. Add the Broth Pour in the entire container of Kettle & Fire Chicken Bone Broth. Add your seasoning blend and stir well to combine.
5. Simmer Cover the pot with a lid and reduce the heat to low. Let the soup simmer until everything is heated through and the flavors have come together.
6. Toast the Focaccia While the soup simmers, toast some pre-made or bakery-bought focaccia until warm and lightly crisp.
7. Serve & Enjoy Ladle the soup into bowls and top with shredded Parmesan and a little extra parsley. Serve with warm focaccia on the side.
