Ingredients

šŸ— Chicken Pot Pie Filling

  • 2 cups shredded cooked chicken

  • 1 bag frozen mixed vegetables

  • 1 can cream of chicken soup

  • 1 can diced potatoes, drained

  • ¼ cup onion, diced

  • ¼ cup celery, diced

  • 3 tbsp butter, melted

  • 2 tbsp olive oil

  • Salt & pepper, to taste

  • Onion powder, to taste

  • Parsley, to taste

  • Celery flakes, to taste

  • Celery seed, to taste

  • Chives, to taste

🄧 Pumpkin Crust

  • 2 packages/rolls pie crust

  • 1 tbsp butter, melted

Instructions

1. Prepare the Filling In a large bowl, combine the shredded chicken, frozen mixed vegetables, drained potatoes, diced celery, and diced onion.

Add the cream of chicken soup, 3 tbsp melted butter, and olive oil. Season with salt, pepper, onion powder, parsley, celery flakes, celery seed, and chives. Mix everything thoroughly.

2. Prepare the Bottom Crust Roll one pie crust into your pie dish, gently pressing it into the bottom and along the sides. Pinch the edges around the rim of the dish.

3. Add the Filling Pour the chicken mixture into the prepared crust and spread it evenly.

4. Create the Pumpkin Crust Roll out the second pie crust on a lightly floured surface or a sheet of parchment paper. Using a pumpkin-shaped cookie cutter, cut out several pumpkin shapes.

5. Add the Pumpkins Carefully arrange the pumpkin-shaped pieces over the top of the pie. The number of pumpkins you can fit will depend on the size of your cookie cutter.

6. Brush with Butter Melt 1 tbsp butterĀ and gently brush it over the pumpkin cutouts and the edges of the crust.

7. Bake Bake at 350°F for 45–60 minutes, depending on your oven and how golden you prefer your crust.

After the first 30 minutes, check on the pot pie every 15 minutes until the crust is beautifully golden.
